Cubby Curry Bowl

Ingredients:

1 can of coconut milk

1 can of tomato paste

1/2 tbs curry

1/2 tbs onion powder

1/2 tbs garlic powder

1 can of black beans

1 packet of instant potatos

Salt and Pepper to Taste

Sabbath, our day of wonderful rest. The day I give myself grace in cooking meals for family. We spend the time hanging out and trying not to spend money, do chores, or cook.

While I spent the day before preparing my home for Sabbath (cleaning all the toilets, laundry, etc.) A smell of gas lead us to leave the home promptly and lead to spending the rest of my afternoon/evening at my sisters house while a tech came out to fix a leak in the gas meter. This left me with out a meal plan for the Sabbath. So, to the cubbys I go on the hunt for something quick that requires no work or prep at all. Rest, Cassy, Rest!

Method:

Make potatoes as instructed on packet.

Mix together in a pot and let simmer for 5 mins: coconut milk, 1/2 can of tomato paste, curry, onion powder, garlic powder, salt and pepper. Taste as you add ingredients to adjust to your liking.

Open and strain/rinse black beans and set aside.

Assembly:

Grab a paper bowl (No dishes! Yay!)

Place some potato in the bottom of the bowl

Scoup about 1/2 cup of black beans onto the potatoes

Pour 1 cup of the warm curry sauce on top

Salt and Pepper to taste

Serve and Enjoy!
